Bold notes of dried fruit and bright citrus make this one of our most popular single-origin chocolates. This chocolate won a Silver Award from the Academy of Chocolate in London, England in 2024. 40 grams.

Chai Ginger: For this chai-inspired chocolate, we start by steeping Steep Mountain Storm Castle Chai blend in pure cocoa butter. We then add this cocoa butter infusion to our 70% dark chocolate before folding in candied ginger for a spicy-sweet kick.

This is one of our favorite ways to enjoy speciality cacao, and it gets better and better as the weather gets colder. We start by making 70% dark chocolate, which involves roasting specialty cacao, winnowing the beans, and then stone-grinding the nibs for three days. We then grind up that chocolate and put it in this bag, ready for you to add to your favorite milk.
Some folks use this mix as "chef's chocolate" to make all type of baked goods. And some folks add it to their morning coffee to make a rich and chocolatey mocha. My Aunt started doing this and thought it was so good she stopped adding Bailey's to her morning cup!
How to Make High Country Hot Chocolate
Bring 3/4 cup of your favorite milk to a light simmer (on your stove, in your wall tent, or in your camp stove). Add 2 tablespoons of this hot chocolate mix, 1/8th tsp of vanilla extract, and a pitch of salt and whisk until the chocolate is completely melted. This recipe makes about 1 serving and you can dial the amount of chocolate up and down to your liking!
